Taco Potato Nachos
Ingredients
- 4 medium baking potatoes
- 1 pound ground beef or ground pork
- 1 packet taco seasoning
- 2 cups cheddar cheese, shredded
- 1 cup green onions, sliced
- 4 pre-made foil packets
- Sour cream
- Taco sauce
Directions
- Boil 4 medium baking potatoes with skin on until fork tender, and let cool. Slice each cooled potato into ¼-inch-thick rounds, and put one potato in each of 4 foil packets.
- Brown the ground beef and season with a packet of your favorite taco seasoning, according to the directions on the seasoning package. Add a quarter of the ground beef to each packet.
- Divide cheese, and onions evenly between the packets. Seal and close the foil packets. Place the packets into campfire coals for 4 minutes. Flip the packets over and cook for an additional 4 minutes on the other side.
- Garnish the finished potatoes with sour cream and taco sauce to taste. Serves 4
