Osage Beach Caviar Brings Delicacy to Missouri
Every week, Steven and Pete Kahrs, the owners of Osage Catfisheries at Osage Beach, deal with another set of orders for their paddlefish caviar.
Osage Catfisheries is a family business that originally sold paddlefish, but their business shifted as the demand for domestic caviar grew. In the mid-1980s, the Kahrs started a paddlefish ranching program, through which they place paddlefish in private lakes and ponds. The fish grow to maturity over a period of seven to 10 years. In the late fall and early spring, the Kahrs harvest the females for their eggs; each fish yields between eight and nine pounds.
The Kahrs expect a flood of orders as their harvests continue to increase. For more information, visit www.osagecatfisheries.com for more information.
