Grilled Goose Breast
2 goose breasts
Black pepper, ground
½ cup vegetable oil
Dash of soy sauce
¼ cup red wine
Slice off the outer membranes of the goose breast fillets.
Rub both sides of the breasts with ground pepper and beat them flat with a mallet.
Marinate them in vegetable oil with a shot of soy sauce. Depending on your mood, add ¼ cup red wine or a shot of gin to give it character. Marinate the breasts for ½ hour to 2 hours.
Get your charcoal or gas grill as hot as possible, and cook the fillets 5 minutes maximum on each side. Cut them into thin slices with a sharp knife and serve. Serves 2.
