Chicken and Pine Nut Quiche
Chicken Pine Nut Quiche
2 cups Taum Sauk Cheese, shredded
2 tablespoons fresh parsley, chopped
2 tablespoons fresh basil, chopped
2 tablespoons pine nuts, chopped
1 1/4 cup heavy cream
2 eggs, beaten
1 teaspoon salt
1/2 teaspoon pepper
1 cup cooked chicken, diced
1 nine-inch pastry pie shell
Preheat the oven to 375 degrees. Mix all the ingredients together in a large bowl. Pour into the pie shell. Bake 40 minutes or until knife inserted in the center comes out clean. Serve at room temperature with fresh salad and crusty warm bread.
Serves 6 as an entree or 8 as an appetizer.
