Beet and Feta Salad


6 cups spring-mix salad greens

Salt and pepper to taste

1/2 red onion, thinly sliced

1/2 cup sliced almonds, toasted

1 eight-ounce can matchstick beets, drained

1/3 cup balsamic vinegar

2/3 cup olive oil

3/4 cup Feta Goat Cheese, crumbled


Place chilled greens in a large salad bowl. Sprinkle with the salt and pepper and toss lightly. Top with onion and almonds, and scatter the beet sticks over all. Drizzle the balsamic vinegar and olive oil over the entire salad. Top with the crumbled Feta Goat Cheese.
