Baccon Wrapped Dates

Serves 4 -6
14 slices applewood smoked bacon
1 pound dates*
8 ounces goat cheese or Boursin, divided
1/4 cup pistachios, roasted and unsalted
Cook 4 slices of bacon, and set the grease aside. Next, de-seed the dates. Puree 4 ounces of goat cheese, the cooked bacon, and the pistachios in a food processor. (You might want to do them in several smaller portions to make it easier on your food processor.) Use the leftover bacon grease to thin it up a little. Cook the rest of the bacon only half way, leaving it still limp. Cut the slices of bacon in half. Stuff the dates with the puréed mixture. Wrap each date and a little of the remaining goat cheese in a bacon slice. Use a toothpick to keep together. Place finished, wrapped dates in the oven at 350 degrees for 4 minutes.
Note: You may use dried dates, or you can substitute figs for something a little different.
