Apple Stuffing for Goose
1 loaf stale bread, cubed and dried
6 tart apples, peeled, cored, and cubed
1 lemon, rind and juice
Salt and freshly ground pepper
Combine bread and apple cubes in a bowl, add the lemon rind and juice, and season with salt and pepper.
Mix lightly. Stuff the bird loosely. Serves 6.
