Head to the Tower Grove Farmers’ Market on a Saturday morning, and you’ll likely find Sheila Korte in her happy place: a fleur-de-lis-emblazoned, forest green school bus that operates as a food truck called Holy Crepe! Sheila, an environmental scientist by trade, made the shift into the food truck industry in 2012 and hasn’t looked back. The food truck lets her combine her experiences growing up on an organic farm and her scientific knowledge in a new way. Her classic crepes—just eggs, milk, flour, butter, and vanilla—do what crepes do best: serve as a foundation for the most in-season fruits and vegetables the market has to offer. Her fruit crepes are sweet and delicious. The BST—the bacon, spinach, and tomato served with a spicy mayo—will leave your mouth watering for more savory flavor.
