Serves 4
Ingredients:
1 large whole chicken
1 clove garlic, minced
1 tsp chopped fresh rosemary
1 tsp chopped fresh thyme
1 tsp chopped fresh oregano
¼ tsp cayenne pepper
¼ tsp freshly ground pepper
½ tsp salt
1 T vegetable oil
Directions:
Preheat oven to 375. Rinse chicken inside and out. Remove pockets of fat just inside the chest cavity. Pat dry. Blend the garlic, rosemary, thyme, oregano, pepper, salt, and oil to make an herb paste. Rub paste over the chicken and under the skin. Roast, breast side up, 1 hours and 15 minutes. Remove chicken from oven. Let rest 15 minutes before carving.
