Serves 4-5
Ingredients:
2 chicken breasts
1/2 cup red seedless grapes, halved
1/3 cup celery, thinly sliced
1/2 cup tart apple, cut into chunks
1/2 cup light mayonnaise
1/4 cup chopped pecans, toasted
salt to taste
celery seeds to taste
For sandwiches, sliced bread or rolls, 4-5 leaves of lettuce, sliced cucumber
Directions:
Cook chicken breasts and cut to ½ inch pieces. Mix all ingredients in a medium bowl. Stack sandwiches. Summer heaven!
For a richer variation, instead of light mayonnaise use ¼ cup sour cream and ¼ cup mayonnaise.
